OK, in a moment of sheer brilliance while I couldn’t sleep last night, I decided that instead of just randomly posting recipes all throughout the week, and to still keep me posting some-what regularly, I would save up all the recipes I collect throughout the week from friends and blogs I read and post them on Fridays. So…For the first time ever, may I present to you….

Over the next few months as we prepare for baby, have baby, adjust to said baby, I’m not going to be doing a lot of posting. However, I’m getting oodles of recipes from friends that I know I will lose and I definitely do NOT want to loose them. So, I will be sporadically posting links to recipes (easier than typing/formatting/etc…Call me lazy…I call me exhausted)
My friend Lindsay gave me this recipe for Cream Cheese Squares and pretty much, I want to eat the picture…
I think it was Kacie that gave me this recipe for Spanish Rice…right now, it’s easy. It comes out of a bag that says “Great Value” on the front
But I can’t WAIT to try this out…in a couple months
My absolute favorite meal at one of my most favorite restaurants (Applebee’s) is the Chicken Fajita Rollup. I found a recipe for it awhile back. Who knows when I’ll try it, but I need it saved for that day I get brave and do try it!

makes 6 jumbo muffins
2 tubes of biscuit dough (I like pillsbury) (20 biscuits in total)
1/2 cup sugar
1 teaspoon cinnamon
6 tablespoons butter
1/3 cup brown sugar
Spray your muffin tin with non-stick spray. Cut each biscuit into 4ths. So in total you should have 80 little pieces of dough. In a bowl, combine the sugar and cinnamon. Dip each piece of dough into the cinnamon-sugar mixture until totally covered. Divide evenly between the 6 cups. (about 13-14 in each cup) In a saucepan boil the butter and brown sugar. Spoon about a tablespoon of the brown sugar/butter mixture over each muffin cup. Bake in a 350 degree oven for about 20-25 minutes or until baked through. Best when hot and fresh out of the oven!

1 cup pb
1 cup honey
3 cups old fashioned oats
1/2 cup milled flaxseed
1/4 cup wheat germ
1/2 cup dried fruit
1/2 cup chopped nuts
1 cup chocolate chips
mini muffin cups
1. Mix peanut butter and honey together until smooth.
2. Gradually add in oats, flaxseed, and wheat germ.
3. Add 1 cup chocolate chips and 1 cup any combination of nuts & dried fruit.
4. Mix gently in stand mixer or smush by hand.
5. Roll into ping-pong sized balls, and put in mini muffin cups or on a cookie sheet.
6. Refrigerate overnight. (You can freeze layered on wax paper in an airtight container.)

Swiss Cheese
Chicken Breasts
Cream of Chicken soup
Milk
Bread Crumbs or Stuffing
Mix milk & soup
Top chicken with cheese
Cover with bread crumbs or stuffing
Bake til chicken is fully cooked
