4 boneless, skinless chicken breasts
4oz. pineapple chunks
1/3C light brown sugar
bacon
Preheat oven to 375
Wrap chicken with bacon
Spray dish and place chicken into dish
Sprinkle with brown sugar
Cover with pineapple and juices
Place in oven and bake for 30-45 mins (depending on thickness of chicken)
Serve with rice or pasta
**I found this had more flavor when I marinated the chicken in pineapple juice for about 6 hours** {More...}

In talking with our chiro, we think our two year old may have a dairy sensitivity...because trying to eat GF wasn't hard enough, we're trying to go DF too...oh who am I kidding - WE're not...haha! We're just not doing any dairy foods for him (no ice cream? Are you kidding? I could never DF!)
So, now I'm on the hunt for more info re: that as well...
Any ideas for toddler friendly DF/GF foods (why not make em both?!) :) {More...}

When I was making the Classic Blondies yesterday, I ran into a problem. We buy a TUB of butter - not sticks...so I had to figure out exactly how much "3/4lb" butter was (I wish I didn't know, lol!)
I jumped on google and searched and came across a great site O Chef - Answers to life's vexing cooking questions. O Chef had JUST the info I needed for my buttery problem!
I'm sure I'll be saying "O Chef..." again soon! :) {More...}

A last minute trip out of town has rescheduled this weeks' menu...

Tuesday, making calzones in bulk
Wednesday, making taco bake for the guys. I'll be grabbing dinner on the run, as I have a meeting.

This weeks' T3 comes from a super yummy recipe site, Allrecipes.com. Two things I love about this site - they adjust the ingredients to your servings for you (that's for math dummies, like me!) and you can always check and see what other people liked and didn't like and tweak it to your families preferences!
1 egg white
1 teaspoon water
1 cup bread crumbs
1 teaspoon dried oregano
1 teaspoon dried basil
2 tablespoons freshly grated Parmesan cheese
1 (25 ounce) package cheese ravioli, thawed if frozen
cooking spray
