We got some (about 6.5" total) snow this weekend and about the only reason this flip-flop-wearin'-summer-lovin-Southern gal was excited to see it (other than watching my kiddos play in it!) was to make some snow cream! Yum! We made this every time it snowed when I was growing up, but since living in NC we haven't seen enough to warrant making any. However, this snow was screaming, snow cream (as are the boys everytime they look out the window!!) :)
It's super simple to make, and delicious to boot!
1Cup Milk
1/2Cup Sugar
1/4tsp Vanilla extract
Mix these ingredients together until the sugar is dissolved.

I never said how they were...I've been working out to lose all 900 lbs I gained eating the entire dish of them. They were seriously amazing. Exclamation marks won't even do justice for me to exclaim just how amazing, so I won't even bother using them.
My sweet boy who needs the GF diet was in heaven. He went nuts whenever we gave him a piece (we scraped the icing off of the boys bars onto ours whenever we gave them a piece for dessert. ahem.)
now. go make them. now. seriously.

Sarah, who blogs at Life in the Parsonage, posted this recipe. She actually posted it LAST October, but was oh so kind to share it again just the other day. I've been daydreaming about them all week.
With a little advice from my friend, Larissa, I was able to make this Gluten-Free (note: I didn't say HEALTHY, just GF) :-D
2 cups sugar
1 cup oil
4 eggs
1 can pumpkin
2 cups flour (to make GF, I used 2.5 cups spelt flour)
2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
for Frosting:
2 cups powdered sugar
3/4 stick melted butter (approximately 1/2 cup)
1 tsp. vanilla
3oz. cream cheese, softened

Thanks to Little Birdie Secrets for this phenomenal recipe!!!
1/2 c. powdered sugar
1/3 c. cornstarch
2 envelopes unflavored gelatin
1 1/3 c. sugar
2/3 c. light corn syrup
1/2 c. crushed peppermint candy canes (about 6)
1/8 tsp. salt
*Tip: to crush your candy canes, break them up in large pieces, then seal them in a Zip Loc bag. Put your bag on a sturdy cutting board and use a hammer to smash them into a powder. The finer the powder, the better.
1. Into a small bowl, sift together powdered sugar and cornstarch. Line a 9x13" pan with foil and spray with non-stick cooking spray.
2. Sift 2 ... {More...}
