I twisted this recipe around. :)
1/2 cup packed brown sugar
1/4 cup white sugar
1/2 cup shortening
1 eggs
3/4 teaspoon vanilla extract
1.5 cups spelt flour ("technically" should have been 1 & 3/4 Cups but I forgot) :)
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup candy-coated milk chocolate pieces
In a large bowl, mix sugar, eggs, shortening, and vanilla thoroughly. Add flour, salt, and baking soda to creamed mixture. Blend well. Add 3/4 cup of M&M candies.
Drop dough by teaspoonful onto cookie sheet. Slightly push a few candies on top of each dough ball with remaining candies.

This has probably been our best GF purchase. Kinnikinnick All-Purpose Mix has recipes on the back for muffins, bread, pancakes and waffles. I ended up making blueberry muffins and we couldn't stop eating them. They were so yummy! It does have way too much 'stuff' in it than I would prefer in such a healthy mix, but it will work for now (until I get gutsy enough to make a GF mix of my own).
The taste was great (since we don't claim to eat healthy...) it tasted just like "normal" blueberry muffins. I think I'm a tad pickier than my ... {More...}

This is on the to-try list for my sweet boy...(find other spelt flour recipes here)
1/2 cup margarine
2 tsp cinnamon
1/2 cup brown sugar
3 eggs
1/2 cup sugar
3/4 cup Spelt flour
1 tsp baking powder
1/4 cup ground almonds
Cream together the margarine and sugar, then beat in 2 eggs.
Add the flour, baking powder and cinnamon.
Mix well, and pour into a greased baking tin.
Mix together the remaining egg, sugar & almonds and spread over top of cake.
Bake in an oven preheated to 350 for 30 minutes. {More...}
