Cherry Pork Chops
6 boneless pork chops
1 tbsp olive oil
1/2 cup beef broth
3 tbsp apple juice
1 can pitted cherries, drained but save juice
2 tsp cornstarch
1 tsp dried crushed rosemary
Heat olive oil in a large skillet. Brown pork chops with a small amount of salt and/or pepper (to taste), about six minutes each side. Carefully pour apple juice and broth into skillet, stir well. Simmer covered for 20 minutes.
In a bowl, combine cherry juice and cornstarch. Add to skillet, stir. Add cherries and rosemary, bring up the heat slightly and cook until sauce has thickened, about 3-4 minutes, stirring constantly.

Chicken Tenderloins
1 cup dry breadcrumbs
1/2 cup grated parmesan cheese
3/4 tsp. salt
1/2 Tbsp. and 1/2 tsp. thyme
1/2 Tbsp. and 1/2 tsp. basil
1/2 - 1 cup margarine, melted
Cut the chicken into nuggets.
Combine the breadcrumbs, cheese, salt, thyme, and basil in a bowl.
Dip the chicken nuggets in the melted butter. Then roll in the breadcrumb mixture.
Place on a cookie sheet and bake at 400 degrees for 15-20 minutes. {More...}

2 lb. of cheese-filled frozen ravioli
1 lb. of cooked chicken breasts in ½ inch slices
2/3 cup of chicken broth
½ cup store-bought basil pesto sauce
½ teaspoon of kosher salt
½ teaspoon black pepper
1 cup of Parmesan cheese
2 cups zucchini, cut into ½-inch rounds (optional)
½ cup red bell pepper, chopped into ½-inch pieces (optional)
Place all ingredients into a large bowl and combine. Transfer to a freezer bag.

1-2lbs of chicken (i usually use 2)
2 cans of crescent rolls
2-4 cups of cheese (we usually use the Mexican blend)
1 can of cream of chicken
1 can of milk
basil
oregano
garlic
olive oil
1. Dice the chicken up and heat olive oil and lots of the spices on med heat.
2. saute the chicken in the spices and olive oil until cooked through
3. let the chicken drain and heat the oven to whatever is on the crescent roll package (350 I think).

1 lb lean ground beef
1 chopped onion
2 cans jalapinto beans (You can get these at Walmart or substitute pinto beans.)
2 cans kidney beans
2 cans shoepeg corn
2 cans stewed tomatoes
1 can Rotel
1 package taco seasoning
1 package Ranch dressing powder mix
1. Brown meat and onion together. Drain and put in crock pot.
2. Add remaining ingredients, including all liquids.
3. Cook on low all day.
4. Serve with tortilla chips, cheese, and sour cream.
**To cook from frozen: thaw completely. Put in crockpot on low for 5-8 hours. {More...}

Baked Chicken:
1 lb ground pork
3 chopped garlic cloves
1 teaspoon grated fresh ginger
1 tablespoon soy sauce
1 teaspoon sesame oil
3 carrots, finely diced
3 stalks celery, finely diced
6 green onions, finely diced
1 (12 ounce) package wonton wrappers
water
oil (for deep frying) your favorite sweet and sour sauce
Directions
Combine pork, garlic, ginger, soy sauce, and vegetables in a bowl.
Separate wonton skins.
Place a heaping teaspoon of filling in the center of the wonton.
Brush water on 2 borders of the skin, covering 1/4 inch from the edge.
Fold skin over to form a triangle, sealing edges.
Pinch the two long outside points together.
Heat oil to 450 degrees and fry 4 to 5 at a time until golden.

Rice
2 cups cooked chicken
8 oz. Sour Cream
1 can cream of mushroom soup
1 can cream of chicken soup
1 tube Ritz crackers
1/2 stick butter
poppy seed
Mix sour cream, soups and chicken together.
Pour cooked rice into a 9 x 13 dish, top with soup/chicken mixture.
Combine crushed crackers and melted margarine.
Cover chicken mixture with cracker mixture.
Sprinkle with poppy seed.

2 Tbs salsa
1 16oz can refried beans
1 cup cooked chicken
1 cup cheddar cheese
10-12 flour tortillas
Stir together first three ingredients.
Spoon bean mixture onto middle of tortillas.
Roll up tortillas and place seam side down in a 9 x 13 pan.
Bake at 350 for 20-30 min.
Sprinkle with cheese.
Serve with salsa and sour cream, if desired. {More...}
