6-8 boneless, skinless chicken thighs or breasts
1 package taco seasoning
1/4 cup flour
2 T. vegetable oil
1 large onion, cut unto 1-in pieces
2 green peppers, cut into 1-in pieces
1 can diced tomatoes with jalapeños, undrained (I just used 1/2 a can of tomato sauce because we don't like chunks of tomatoes)
Salt & pepper to taste
Trim fat from chicken

A definite winner in our home! A friend sent this to me after finding it on allrecipes.com and I gave it a try while my mom was in town - huge success (well, with everyone but the picky toddler, of course, lol) Hubby also informed me that the leftovers were "awesome" frozen & re-heated later in the week at work - double score!
6 skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk
4 ounces sliced ham
4 ounces sliced Swiss cheese
1 (8 ounce) package herbed dry bread stuffing mix

My friend Marci sent me this recipe awhile back and I keep forgetting to try it!
4 lbs. medium red potatoes, quartered
3 lbs. ground chicken
4 medium carrots, finely chopped
2 medium onions, finely chopped
¼ cup all-purpose flour
2 Tbsp. tomato paste
1½ tsp. salt
¾ tsp. pepper
¼ tsp. minced fresh thyme
1¼ cups chicken broth
1 cup milk
6 Tbsp. butter, cubed
1¾ cups (7oz) shredded cheddar cheese
1. Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender.

This will be on the to-try list. I just got it from a friend.
2 cans kernel corn, drained
1 can black beans, drained
1 jar chunky salsa
2-3 frozen chicken breasts
1 (8 oz) block cream cheese (do not use the whipped variety, it will not turn out right.)
Mix the corn and beans with 1/2 jar of salsa in bottom of crockpot. Lay the chicken on top of this and cover with remaining salsa. Cook on high 5-7 hours, until chicken is cooked through. 1 lb lean ground beef
1 chopped onion
2 cans jalapinto beans (You can get these at Walmart or substitute pinto beans.)
2 cans kidney beans
2 cans shoepeg corn
2 cans stewed tomatoes
1 can Rotel
1 package taco seasoning
1 package Ranch dressing powder mix
1. Brown meat and onion together. Drain and put in crock pot.
2. Add remaining ingredients, including all liquids.
3. Cook on low all day.
4. Serve with tortilla chips, cheese, and sour cream.
**To cook from frozen: thaw completely. Put in crockpot on low for 5-8 hours. {More...}

OK, I'm giving in...the 'secret' to my amazing BBQ ;-) sigh....
Chicken
BBQ sauce - which ever style you prefer - are you NC style or Memphis?? Memphis all the way! ;-)

Burger buns
Throw the chicken in the crock pot (I usually use 1lb of breasts, but, like to double to freeze)
Dump in 'some' BBQ sauce (can you have too much? No didn't think so!)
Pour in 3/4 can Dr. Pepper (drink the remainder!)
Let simmer on low for 6-8 hours
Shred and put on buns! {More...}

I 'stole' this recipe from my friend Kristen. She has some very yummy recipes!
1-1/2 pounds boneless skinless chicken breasts
3 tablespoons lime juice
1 tablespoon chili powder
1 cup frozen corn
1 cup chunky salsa
12 flour tortillas (6 inches), warmed
Sour cream, shredded cheddar cheese and shredded lettuce, optional
Place the chicken in a 3-qt. slow cooker. Combine lime juice and chili powder; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender.
Remove chicken; cool slightly. Shred and return to the slow cooker. Stir in corn and salsa. Cover and cook on low for 30 minutes or until heated through. ... {More...}

1lb. ground beef
4-5 cups spaghetti sauce (depending how firm or juicy you want the lasagna)
24oz. container cottage cheese
1 egg
8-10 lasagna noodles, UNCOOKED
2-3 cups mozzarella cheese
Combine beef and sauce
Combine egg & cottage cheese
Layer half the beef mixture, the dry noodles, the cottage cheese mixture and mozzarella in slow cooker.
Repeat layers.
Cover
Cook on high 4-5 hours OR on low 6-8 hours {More...}

1lb. Ground beef, browned
32oz. jar spaghetti sauce
OR jar of sauce with meat ;-)
8oz. bag, cruly edged noodles, COOKED, or cut up & cooked
16oz carton cottage cheese
8oz shredded mozzarealla cheese
Parmesan cheese to taste
Combine noodles, cottage cheese and mozzarella cheese
Layer beef/sauce mixture, followed by half of the noodle mixture
Repeat layers, ending with beef sauce mixture
Sprinkle with Parmesan cheese
Cover

1 can of Corn
1 can of Black Beans
1 can of kidney beans
2 Cans Rotel
2 peices of chicken breast
1 package of taco seasoning
(if you want it a little soupier add in a can of tomato paste,but I like it thicker)
Just throw everything into the crockpot and let it cook all day long put your chicken breast on top. 30 minutes before it's ready remove the chicken breast and shread put back in the soup and let cook 30 more minutes. {More...}
