4 boneless, skinless chicken breasts
4oz. pineapple chunks
1/3C light brown sugar
bacon
Preheat oven to 375
Wrap chicken with bacon
Spray dish and place chicken into dish
Sprinkle with brown sugar
Cover with pineapple and juices
Place in oven and bake for 30-45 mins (depending on thickness of chicken)
Serve with rice or pasta
**I found this had more flavor when I marinated the chicken in pineapple juice for about 6 hours** {More...}

1 tbsp olive oil
1 cup pre chopped onion
1 tsp minced garlic
1/2 tsp ground cumin
1/2 tsp ground chipotle chili pepper
1/4 tsp ground cinnamon
1 pound ground chicken breast
1/2 bottle salsa
1/2 cup water
1/2 tsp salt
2 tbsp chopped fresh cilantro
1 tsp limejuice
4 - 6 inch corn tortillas
1 cup shredded iceberg lettuce
1 cup shredded Mexican cheese

6-8 boneless, skinless chicken thighs or breasts
1 package taco seasoning
1/4 cup flour
2 T. vegetable oil
1 large onion, cut unto 1-in pieces
2 green peppers, cut into 1-in pieces
1 can diced tomatoes with jalapeños, undrained (I just used 1/2 a can of tomato sauce because we don't like chunks of tomatoes)
Salt & pepper to taste
Trim fat from chicken

A definite winner in our home! A friend sent this to me after finding it on allrecipes.com and I gave it a try while my mom was in town - huge success (well, with everyone but the picky toddler, of course, lol) Hubby also informed me that the leftovers were "awesome" frozen & re-heated later in the week at work - double score!
6 skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk
4 ounces sliced ham
4 ounces sliced Swiss cheese
1 (8 ounce) package herbed dry bread stuffing mix

My friend Marci sent me this recipe awhile back and I keep forgetting to try it!
4 lbs. medium red potatoes, quartered
3 lbs. ground chicken
4 medium carrots, finely chopped
2 medium onions, finely chopped
¼ cup all-purpose flour
2 Tbsp. tomato paste
1½ tsp. salt
¾ tsp. pepper
¼ tsp. minced fresh thyme
1¼ cups chicken broth
1 cup milk
6 Tbsp. butter, cubed
1¾ cups (7oz) shredded cheddar cheese
1. Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender.

A friend sent us Chicken Cordon Bleu after our first son was born. So yummy :)
4 boneless chicken breasts
4 slices Baby Swiss Cheese
4 slices deli style ham (I use sandwich meat)
1/2 cup of bread crumbs
Preheat oven to 350.
Lay chicken breast out flat, place a slice of cheese and a slice (or few if thin!) of ham on each breast.
Roll and secure with a toothpick.
Place in a greased casserole dish.
Sprinkle bread crumbs over rolls of chicken.
Bake for 30 minutes or until chicken is done. (Note: if chicken breast is thick, pound it out a bit so it is flatter and will cook more evenly).

This will be on the to-try list. I just got it from a friend.
2 cans kernel corn, drained
1 can black beans, drained
1 jar chunky salsa
2-3 frozen chicken breasts
1 (8 oz) block cream cheese (do not use the whipped variety, it will not turn out right.)
Mix the corn and beans with 1/2 jar of salsa in bottom of crockpot. Lay the chicken on top of this and cover with remaining salsa. Cook on high 5-7 hours, until chicken is cooked through. Chicken Tenderloins
1 cup dry breadcrumbs
1/2 cup grated parmesan cheese
3/4 tsp. salt
1/2 Tbsp. and 1/2 tsp. thyme
1/2 Tbsp. and 1/2 tsp. basil
1/2 - 1 cup margarine, melted
Cut the chicken into nuggets.
Combine the breadcrumbs, cheese, salt, thyme, and basil in a bowl.
Dip the chicken nuggets in the melted butter. Then roll in the breadcrumb mixture.
Place on a cookie sheet and bake at 400 degrees for 15-20 minutes. {More...}

8 dried lasagna noodles
1- 15oz. carton ricotta cheese
1.5C chopped, cooked chicken
1 beaten egg
1/2 tsp. dried basil
2 T butter
2T all-purpose flour
1/2 tsp. dry mustard
1/4 tsp. sale
1/8 tsp. black pepper
1.5C milk
1.5C shredded Swiss Cheese
Cook lasagna noodles according to pkg. directions; drain. Rinse with cold water; drain well. For filling, in a medium bowl, combine ricotta cheese, chicken, egg and basil.
Spread about 1/3 cup filling over each noodle. Roll up noodles and place "bundles", seam side down, into ungreased 2 quart rectangular baking dish. Set aside.
