Adapted this recipe from here. It was ok. Benjamin loved them, so that's all that really mattered (since they were/are for him, ha!)
1 – 1 1/2 lb sweet potatoes
1/4 cup olive oil
1/2 tsp kosher salt (I used sea salt)
1/2 tsp paprika (I left this out)
1/4 tsp cinnamon
Preheat oven to 425 degrees. Line a baking sheet with aluminum foil (preferably the easy release kind).
Peal the sweet potatoes. Cut into strips that are about 1/2 inch wide on each side.
Place the sweet potatoes into a resealable plastic bag. Add oil, salt, paprika and cinnamon. Seal the bag and shake well ... {More...}

Potatoes
Butter
Cheddar Cheese
Other potato toppings as desired
Cook potatoes in oven or microwave
Slice off top and spoon out potato into a bowl
Mix in potato, butter, cheese (& other toppings)
Top with more cheese
Bake at 350 degrees until cheese melts {More...}

1-10oz. pkg. refrigerated pizza dough
2 tbs. butter, melted
½ cup Parmesan or Romano cheese
2 tsp. dried Italian seasoning, crushed
¼ tsp. garlic powder
1/8 tsp. ground red pepper
1-8oz. can pizza sauce, warmed
Lightly grease a large baking sheet
Unroll pizza dough
Brush the dough with the melted butter
In a small bowl combine Parmesan cheese, seasoning, garlic powder and red pepper – sprinkle over dough
Cut dough crosswise into 12-1inch strips
Cut in half length-wise to make 24 pieces
Bake at 425 degrees for 10-13 minutes

8 oz package cream cheese
1/2 c. caramel ice cream topping
1/4 c. honey
1/4 t. cinnamon
3 to 4 sliced red and green apples
Combine cream cheese, caramel topping, honey and cinnamon.
Beat until smooth.
Store in refrigerator until chilled.
Sprinkle with cinnamon and serve with apple slices. {More...}
