A friend brought us this after our 3rd son was born, and I think I make it once a month now – so yummy!
The only difference, I usually use THIS recipe for my dough (it is seriously the best dough I’ve ever made!) I usually make 4-6 batches at one time and throw them in the freezer so we can have pizza/calzones anytime
I freeze the dough flat in a ziploc bag and throw it on the counter a few hours before I need to use it, works great!
10oz package frozen spinach, thawed & drained
1lb. sausage, cooked & crumbled
2C package of shredded mozzarella cheese
3T Parmesan cheese (I just use the container, but fresh is so much yummier)
3/4C cottage cheese
1/2C sour cream
2oz cream cheese
1t garlic powder
pepper to taste (I usually omit this, as the sausage has a kick, and adding more would be pushing it for any picky eaters in the house)
1 can pizza dough (or recipe above)
1 jar spaghetti sauce (I always forget this part, but it is just fine without!)
Prepare sausage and steam spinach.
In separate bowl, mix cottage cheese, sour cream, cream cheese, garlic & parm cheese – I use a hand mixer to make this really creamy.
Squeeze the spinach to get out all the water and add it to the cheese mixture, again, mixing with hand beaters.
Add the sausage and mix by hand.
Spray a cookie sheet and roll out the pizza dough. On half, put the sausage/spinach/cheese mixture, covering with mozzarella cheese.
Fold over dough and mash ends.
Bake at 425 for approximately 15-20 minutes (depending on which dough you use, your time will vary).
Heat sauce in sauce pan to use for dipping.
