Chicken Taquitos

I snagged this from my sis-in-law a couple months ago and it is pretty much one of our favorite meals now. I’ve adapted it a tad.

3oz. cream cheese, softened
1/4C salsa
1T lime juice
1/2t ground cumin
1t chili powder
1/2t onion powder
2 minced garlic cloves
3T chopped cliantro
2T green onions, sliced
2C cooked chicken, shredded
1(ish)C Mexican cheese, shredded
tortillas
salt
cooking spray

Mix together everything.

Fill tortilla shells & roll

Place seam side down on a greased baking sheet

Spray tortillas w/ cookie spray and sprinkle with salt

Bake at 425 for 15-20 minutes.

To freeze: prepare as directed above. But instead of placing on a greased baking sheet, wrap each tortilla in saran wrap and place the batch in a freezer ziploc bag. When ready to eat, no need to thaw, simply follow the baking instructions, baking for a few moments longer.

These are in one word: amazing. :)

*This makes approximately 1 dozen taqutos
