Salsa

My friend, Carrie, who is helping me along in this Dairy Free journey gave me this recipe. Here are some notes from her: You can experiment with a couple of ingredients based on the spice factor you like… as is, this can get pretty spicy depending on the size of your jalepeno, also with the rotel you could use both mild if it gets to spicy for you.
1 can of whole tomatoes
2 cans of Rotel (one original and one mild)
1/4 cup onion
1 clove garlic
1 jalapeno
1 lime (half if it is a large lime)
1/4 teaspoon of sugar, salt, and cumin
1/2 cup cilantro (or 8t dried)

Add the tomatoes and Rotel to a food processor or blender.
Dice the onion, garlic (I dice mine really fine because the garlic doesn’t seem to get chopped in the processor), and jalapeno.
Add that all in, then add juice of lime, sugar, salt, cumin and cilantro.
Pulse it all until it is the consistency you like and then refrigerate for at least 2 hours before serving.
