Hey! I just found your blog, and I thought I’d share a recipe that I found online a while ago. It came from pastorswife.com/20081.pdf It is called Cowboy Cookies and makes 5 1/2 dozen.
You need: 1 cup butter, 2 eggs, 1 tsp. baking powder, 2 cups quick-cooking oatmeal, 1/2 cup pecans (optional), 1 cup vanilla, 1 tsp. baking soda, 1 cup packed brown sugar, 2 cups flour, 1/2 tsp. salt, and 3 oz. each of chocolate and butterscotch chips.
1. Cream the butter and sugar together.
2. Add the eggs and vanilla. Mix well.
3. Add all dry ingredients, including the nuts and the chips.
4. Drop on a greased baking sheet by the teaspoonful.
5. Bake at 340*F 9-11 minutes.
These are extremely filling! They taste good, too.
