Sausage Pockets

A friend of mine made these Sausage Pockets for a freezer meal swap when we swapped some breakfast foods too. They were amazing!

1/2 of a 1-lb. Jimmy Dean sausage roll
1 8-oz. block cream cheese
1 tube crescent rolls (I used the Big & Buttery ones)

Preheat oven to 350 degrees.

Brown the sausage in a skillet over medium heat. Drain on paper towels and wipe out the skillet. Return the sausage to the skillet (off of the heat) and add the cream cheese. Stir together until the cream cheese is melted.

Open the tube of crescent rolls and unroll onto a work surface. Press together the seams of the triangles leaving the three “scored” rectangles. Cut each rectangle into two squares, making 6 squares to work with. Press the squares out slightly creating more surface area. Put approximately 1/4 cup sausage cheese mixture in the center of each square. Pull corners up over the center and twist creating little pockets. Twist and press the seams to make sure they are all sealed.

Place on a baking sheet or baking stone and bake in a 350 degree oven for 20-22 minutes. Serve warm.

*Makes 6 Pockets

I think I am going to try these and freeze them.

How would I freeze them?

I would take a freezer bag and put in the pockets, laying flat (not thrown on top of each other) and just freeze them that way. (does that make sense?)

When we had them for breakfasts, we tried microwaving them, but putting them in the oven for about 15-20 minutes made them taste SO much better!

I am going to give it a try.

I am going to start trying some freezer meals since my life is becoming more and more busy it seems. With school, work, Brooke & Billy…

The best way to start, in my opinion, is to double something you’re already making. For example, if you’re making chili, double it and freeze half/what’s left; if you’re making a casserole, get a foil pan/lid and make two – bake one and throw the other in the freezer.

Soups and “messy” casseroles are great because they can just go in a ziplock bag, laid flat and then pull out to thaw and bake/throw in the crockpot.

I love freezing meals, lol
