I 10 oz can enchilada sauce ( I use Old El Paso hot… I think that brand tastes the best, but it is spicy… you could use mild instead if you don’t want it so spicy)

2 handfuls-ish of sharp cheddar cheese

2 handfuls-ish of jack cheese

1 can of refried beans

5 to 6 tortillas (I use the soft taco size which is in between the small and largest size.)

Sour cream

(cooked ground beef or cooked cubed chicken would be good in this too)

Preheat oven to 375 degrees. On the stovetop, heat beans with 1/2 handful of cheddar cheese and 1/2 handful of jack cheese. Add in 3/4 of jar of enchilada sauce. Mix well. Add your meat, if you are using it, to the bean mixture. Spoon mixture into tortillas and roll them up. Place into a greased pan. Add remaining sauce on top and then top with remaining cheese. Bake until cheese is melted and slightly bubbly or about 15 – 20 minutes. Top with sour cream and enjoy! You can always add more cheese to your liking.
