Southwestern-Style Chicken

I will come back to update tonight after we try it – but it looks delicious…smells awesome…I can’t wait!

6-8 boneless, skinless chicken thighs or breasts
1 package taco seasoning
1/4 cup flour
2 T. vegetable oil
1 large onion, cut unto 1-in pieces
2 green peppers, cut into 1-in pieces
1 can diced tomatoes with jalapeños, undrained (I just used 1/2 a can of tomato sauce because we don’t like chunks of tomatoes)
Salt & pepper to taste

Trim fat from chicken

Reserve 1t. of taco seasoning. Combine flour and remaining taco seasoning in plastic food storage bag. Add chicken and shake to coat.

Heat oil in pan over med-high heat; brown chicken. Transfer chicken to crockpot & sprinkle with reserved taco seasoning

Add onions to skillet; cook until translucent. Transfer onion to crockpot. Top with green peppers and tomatoes with juice. Cover.

Cook on low 6-7 hours or until chicken is tender.

Like Rotel? I don’t care for chunks either, so I puree it. That’s how I make salsa when I have a craving too! Well, not so much anymore since the Sophster doesn’t tolerate tomatoes very well :( .

I guess it would be rotel…? I just went by the recipe in the cook book — I didn’t even bother looking at options, lol :) just added a similar liquid substitute ;-)

  • Terra: I don't think I did, but I usually just use a mixture of powdered sugar and milk (about 3/4C powdered sugar and 1-2T milk). And, I don't even remembe
