Mexican Biscuit Casserole

We had this for dinner tonight and my jaw dropped at how yummy it was! This was probably one of the best meals I’ve made. When our schedule isn’t so crazy, I’ll do the biscuit mix from scratch, but right now, while we adjust, Bisquick saved the day! :)

1.5lbs. ground beef (I justĀ  used one pound)
1 package taco seasoning
3/4 cup water
1 can (16oz) kidney beans, undrained (I DID drain – kidney bean juice makes me gag — I filled the can up with water and added that to the mix)
1 can (11oz) corn with sweet peppers, drained (we used one with jalapenos and tomatoes)
1 cups packaged biscuit mix
2/3 cup milk
1 cup shredded cheddar cheese

Brown meat, drain

Add taco seasoning, water, beans, corn and bring to boil

Combine biscuit mix and milk, stir until moistened

place meat mixture in 2qt. ungreased dish

Top with cheese

Drop biscuit mix in mounds on top of hot meat mixture

Bake, uncovered, at 350 for about 20 minutes

Let stand 5 minutes before serving
