Chocolate Chip mint Cookies

Posted by: Terra In: Cookies|Dessert

My friend Jerri made these for small group one night. If you love Thin Mints, you’ll want to eat these cookies asap! :)

1 package Dark Chocolate Fudge Cake Mix
2 large eggs

1/2 C butter or margarine, melted

1/4 C packed brown sugar

1/2 tsp vanilla extract

1/2 tsp mint extract

Andes creme de menthe chips

Preheat oven to 350 degrees.
Stir together cake mix, melted butter, brown sugar, vanilla extract, and mint extract.
Stir in as many Andes mint chips as you like (I like lots!).
Drop onto greased baking sheets (making them as big or small as you like).
For chewy cookies, bake for 12 minutes. For crisp cookies, bake for 14 minutes.
Remove and let cool.
