Cheesy Chicken Bundles

8 dried lasagna noodles
1- 15oz. carton ricotta cheese
1.5C chopped, cooked chicken
1 beaten egg
1/2 tsp. dried basil
2 T butter
2T all-purpose flour
1/2 tsp. dry mustard
1/4 tsp. sale
1/8 tsp. black pepper
1.5C milk
1.5C shredded Swiss Cheese

Cook lasagna noodles according to pkg. directions; drain. Rinse with cold water; drain well. For filling, in a medium bowl, combine ricotta cheese, chicken, egg and basil.

Spread about 1/3 cup filling over each noodle. Roll up noodles and place “bundles”, seam side down, into ungreased 2 quart rectangular baking dish. Set aside.

For sauce: in medium saucepan, melt butter over medium heat. Stir in flour, mustard, salt and pepper. Add milk all at once. Cook and stir until thickened and bubbly. Gradually add cheese, stirring until melted after each addition. Pour sauce over bundles. Cover dish with foil.

Bake at 375 for 30-35 minutes.
