Strawberry Bread

A friend posted this on Facebook and I can’t wait to try it!

4 cups strawberries
3 1/8 Cup all-purpose flour
2 cups white sugar (plus a little to sprinkle on strawberries)
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 1/4 cup vegetable oil
4 eggs, beaten

Directions:
Preheat oven to 350 degrees. Butter and flour (or spray) 2 9 x 5 inch loaf pans.
Slice strawberries* and place in medium-sized bowl. Sprinkle lightly with sugar, and set aside while preparing bread mixture.
Combine flour, sugar, cinnamon, salt, and baking soda in large bowl, mix well. Blend oil and eggs into strawberries. Add strawberry mixture to flour mixture, blending until dry ingredients are just moistened. Divide batter into pans.
Bake for 45 to 50 minutes, or until tester inserted comes out clean. Let cool in pans or on wire rack for 10 minutse. Turn loaves out and cool completely.

*When I make it again I will slice 2 cups and puree 2 cups. I think it will give the loaf a more strawberry flavor rather than bread flavor with bites of strawberries.

SO yummy!!! A winner if you have WAY too many strawberries ;-)

its totally yummy!!ive subbed half applesauce for the oil, and done half whole wheat flour. ive even cut down the sugar a little. ive made it into a bundt cake pan too!(as i don’t have 2 loaf pans!)

*people on the recipe board on bz have subbed blueberries for the strawberries.

I did mine all whole wheat flour, it’s perfect :)
