Pretzals
2t OR 1/2pkg yeast
3c unbleached white flour
1T sugar
1/2t salt
2T butter
1c water
1 quart water
5t baking soda
coarse salt (kosher or sea)
Put yeast, flour, sugar, 1/2t of salt, butter and 1 cup water into machine on “dough” or “manual” setting
When dough is ready, remove it and divide into 12 equal parts. Roll into long strands and shape into pretzals
Set pretzals on cookie sheet and cover with dish cloth. Let rise in a a warm, draft free place for 45 mins (oven is a good place)
Put 1 q. of water and 5t of baking soda in large, nonaluminum sauce pan and bring it to simmering stage (just before boiling). Reduce to low heat before the water gets a chance to boil
Carefully drop pretzals into hot water for 1 min. each. Remove with slotted spoon and put on greased cookie sheet
Sprinkle with small amt. of coarse salt
Bake at 475 for 10-12 mins.
