I posted on Facebook earlier that I had a craving for some ice cream cake. While I was meaning like a Coldstone Creamery cake w/ frosting and all a friend posted this recipe and gave me an entirely different craving - can you say YUM!? (She claims it's super easy too!) Bonus!
Take a package of cookies (chips ahoy or oreo - whatever) and crush it up super duper fine.
Melt about 1/3c butter and mix it with the crushed cookies - push into pan to form your "crust."
Pour hot fudge, caramel, whatever over the crust.
Then put softened ice cream over that ... {More...}

We got some (about 6.5" total) snow this weekend and about the only reason this flip-flop-wearin'-summer-lovin-Southern gal was excited to see it (other than watching my kiddos play in it!) was to make some snow cream! Yum! We made this every time it snowed when I was growing up, but since living in NC we haven't seen enough to warrant making any. However, this snow was screaming, snow cream (as are the boys everytime they look out the window!!) :)
It's super simple to make, and delicious to boot!
1Cup Milk
1/2Cup Sugar
1/4tsp Vanilla extract
Mix these ingredients together until the sugar is dissolved.

2 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, room temperature
1 cup light brown sugar, firmly packed
2 large eggs
1 1/2 teaspoons vanilla extract
1 cup butterscotch chips
1 cup semisweet chocolate chips
Mix together the flour, baking soda, and salt. Set aside.
Cream butter and brown sugar until light and fluffy. Beat in eggs, one at a time, beating after each addition. Stir in vanilla extract.
Stir flour mixture into the creamed mixture. Fold in pecans, butterscotch chips, and chocolate chips.
Shape dough into 1-inch balls. Place balls about 2 inches apart on greased baking sheets. Flatten each cookie slightly.

4 boneless, skinless chicken breasts
4oz. pineapple chunks
1/3C light brown sugar
bacon
Preheat oven to 375
Wrap chicken with bacon
Spray dish and place chicken into dish
Sprinkle with brown sugar
Cover with pineapple and juices
Place in oven and bake for 30-45 mins (depending on thickness of chicken)
Serve with rice or pasta
**I found this had more flavor when I marinated the chicken in pineapple juice for about 6 hours** {More...}

1C whole wheat flour
1/2C unprocessed bran
1/2C ground flax seed meal
1/4C brown sugar
1t. baking powder
1/2t. baking soda
1/2t. salt
Mix these ingredients together
1/2C peanut butter - cut into mixture
Make a well in center and add:
1C Buttermilk
1 beaten egg
2T oil
Stir until just moist. Bake at 400 for 12-15 minutes {More...}

2 1/4 cups water
1 cup agave nectar
2 tbsp lemon zest (1 lemon)
2/3 cup fresh lemon juice
Mix well. Refrigerate. Pour into ice cream maker and follow instructions to make ice cream. {More...}
